ROOT VEGETABLE ROAST

 

A savory side with enough personality to replace a full meal, this veggie roast is a quick way to surely impress guests.

 

Ingredients:

  • 2 large sweet potatoes
  • 4 carrots
  • Salt & pepper
  • Extra virgin olive oil
  • 4 springs rosemary
  • 10 springs thyme
  • 6 large shallots
  • 3 apples


Method:

Preheat oven to 200c.
Chop and mix all the herbs.
Cut carrots, and sweet potatoes into wedges and toss with olive oil, herbs, salt and pepper.
Cut shallots and apples in wedges and set aside. 
Bake carrots and sweet potatoes for 15 min.
Add in shallots and apples and bake for 25 minutes more.
Serve with a dash of salt.
