PEACH, LIME AND MOZARELLA SALAD

Ingredients:

(Serves 2)

Delicately slice:
3 peaches
1 lime

Tear Apart:
2 mozarella or burrata balls

For the pickled shallots:
1/2 cup apple cider vinegar
1/2 teaspoon salt
1/2 teaspoon sugar
1 large shallot slice thin


Dressing:
Drizzle extra virgin olive oil
1 Tablespoon capers
Fresh cracked pepper & sea salt

 

Method:

In a plate, scatter peaches, lime, mozarella & drizzle extra virgin olive oil.
Place vinegar, salt & sugar in a small sauce pan over medium heat.
Once simmering turn heat off and add the shallots until liquid cools.
Spread cooled shallots over salad and sprinkle with capers, salt & pepper.
